Last week a cafe owner from Kuching sent me a WhatsApp voice note at 11pm. She was mid-batch, covered in cream cheese, and genuinely upset that her durian cheesecake tasted like durian-flavoured air.
I knew the problem before she finished talking. Artificial flavouring paste. One teaspoon of yellow gel is not durian. It is disappointment in a bottle.
So I promised her I would write this down properly. Here it is.
Why Real Durian Paste Changes Everything
We process our durian at SFE during the December to January season, when the fruit comes down from Ulu Kanowit and the Ngemah river areas. These are natural-grown, old-tree durians. Not plantation fruit. The trees are older than most of our grandparents, and you can taste the difference.
The flesh goes in fresh. Nothing artificial added. The result is a paste with real bitterness, real sweetness, and that signature smell that either excites you or clears the room. That is real durian. That is what your cheesecake should taste like.
No-Bake Durian Cheesecake (Commercial Batch)
I will be honest — I am a fruit man, not a pastry chef. This recipe is adapted from a standard no-bake cheesecake base that has been tested and adjusted in actual cafe kitchens. I did not invent the wheel. I just swapped in the good fruit.
This formula is sized for a standard half-tray. Scale up as needed.
Base
- 300g digestive biscuits, crushed fine
- 130g salted butter, melted
Filling
- 500g full-fat cream cheese, room temperature
- 200ml whipping cream
- 150g SFE durian paste
- 80g icing sugar (adjust to taste — real durian paste already carries sweetness)
- 1 tsp vanilla extract
- 10g gelatine powder, bloomed in 50ml cold water
Method
- Press the biscuit and butter mixture firmly into your lined tray. Refrigerate for 20 minutes.
- Beat cream cheese until smooth. Add icing sugar. Mix well.
- Fold in the durian paste. Taste it at this stage. Good, right? That is real fruit doing the work.
- Whip the cream to soft peaks. Fold gently into the durian mixture.
- Melt the bloomed gelatine over low heat until clear. Cool slightly, then stream into the filling while mixing slowly.
- Pour over the chilled base. Smooth the top. Refrigerate at least 4 hours, overnight is better.
A Few Honest Notes
150g of SFE durian paste per half-tray gives a clear, genuine durian flavour without being aggressive. If your customers are serious durian lovers, push it to 180g. If you are selling to a more general crowd, stay at 130g.
Do not reduce the cream cheese to compensate for a stronger paste ratio. The fat content in cream cheese is what carries and rounds out the durian flavour. Cut it and the whole thing falls flat.
Also, serve this chilled. Not frozen. Frozen cheesecake goes grainy and you lose the texture entirely. I learned this the hard way at a food fair in Sibu. We do not talk about that day.
For Cafes and Bakeries Ordering in Bulk
Our durian paste comes in 1kg sealed packs, frozen. Shelf life is 24 months from production date. The packs thaw cleanly with no separation, which makes prep straightforward for busy kitchens.
We process during the December to January season, so stock produced early in the year carries you well through the rest of it. If you are planning your menu for the coming months, now is a reasonable time to sort out your supply before stock moves.
